- Throw your flours into a large bowl and add warm water, whisk it until it’s nice and thin! Make sure it’s a bit runnier than regular pancake batter so it spreads easily.
- Give the batter about 10 minutes to relax, You’ll start to see little bubbles forming on the top and that's exactly what you want it to look like.
- Get your pan medium hot. Pour a big scoop of batter in the middle, then quickly use the back of a spoon or measuring cup to swirl it out in a circle until it covers most of the pan.
- Watch for bubbles! Wait till the whole top is covered in tiny holes and looks dry before you flip. If you like it extra crispy, leave it a bit longer until the edges start to lift.
- Finally slide the Anjero onto a plate. While it’s steaming hot, rub some butter onto it and drizzle either loads of honey or syrup. Stack’em up and enjoy!
