Chocolate Coconut Easter Bunnies

It’s springtime. Most of the snow has melted, the first flowers are starting to bloom, robins are hopping around on the ground. The clouds looking like mounds of cotton candy are slowly drifting on the dreamy morning sky. The sun peeks through the clouds, warming the earth and awakening any critters from their hibernation. People are decorating their front porches with Easter bunnies and Easter eggs, yellow chicks and plenty of other colourful decorations, preparing them for the upcoming holiday that can be celebrated in so many different ways. Maybe it’s religious, or maybe it’s doing egg hunts, enjoying the warmer weather and the beginning of a new season, possibly just eating a bunch of chocolate. Whatever it is, it always makes for a happy time to enjoy with your family or friends. With this time of year also comes an annual Easter-themed recipe that has been bringing my family joy for many years.
I love rabbits - they have been my favorite animal since I was a little kid, so Easter has always been my most loved time in the spring. To celebrate this happy season, my mom and I got inspiration from the typical egg hunt, but since I was a passionate bunny-lover, we decided to make it a bunny hunt! So each year, we would make these chocolate coconut bunnies, which my mom would then hide around the house with little sticky notes next to them that had a hint to where the next bunny is, and I would make my way around the house to find them, excitedly wandering from room to room with my pink Easter Bunny basket.
The recipe is made with white chocolate - my favorite when I was younger - but you can make it with any type of chocolate. Coconut has also been one of my preferred snacks when I was little (and it still is): Coconut yogurt, dried coconut and for sure shredded coconut, which I liked to eat straight out of the bag, trying my best not to inhale it. Chocolate coconut bunnies can be served as a dessert, a snack, or whenever you need something to satisfy your sweet tooth. Up to this year we still make them every Easter, and though one day I will probably get too old for the bunny hunt game, I will never forget the fun and joy it has brought me throughout my childhood. It’s a cute and easy recipe to make anytime you want, not just during Easter, although it sure does bring more life into the happy springtime holiday.

Ingredients:
- 200g of white chocolate
- 200g shredded coconut - you might not need that much, but that's typically 1 package
Supplies:
- Small pot
- Small bowl
- Spoon
- Bunny cookie mold
Instructions:
- Put some water into the pot and set it to a boil. Put the bowl over the pot (make sure it fits right in).
- Break the chocolate into squares and put them in the bowl.
- When the chocolate starts to melt, add the coconut in - again, there’s not a specific amount you need, just don’t put more than the amount of chocolate.
- Mix with the spoon.
- When the chocolate's completely melted and mixed with the coconut, use your spoon to fill the bunny molds. Fill about halfway (so it doesn't make a mess).
- Put the bunny molds in the fridge for a few hours to let it harden and take shape.
- Pop them out of the mold, put them in a bowl and eat. Store in the fridge. Enjoy!
