My mom's family is by no means known for baking, so the simpler the recipe the better. For us, the easiest recipe of all is the cookies on the back of the Kraft peanut butter jar, made up of only three ingredients. Egg, sugar, and the most important of all: peanut butter, which was my absolute favourite food as a kid. The creamy, rich texture and the sweet yet savoury flavour made it one of the few foods I would always love as a picky eater. My fondness for peanut butter came from my mom, who quite literally eats it by the spoonful. We would always make the cookies together every couple of months. Proudly scooping the peanut butter and using the mixer to blend the batter made me feel accomplished, important. It made me feel like a grown up. These cookies were my first ever experience baking and it is the only recipe I know by heart, not just because of the simplicity. Spending a weekend in the kitchen filled with the smell of smashed up peanuts, and my mom patiently telling me what to do: it was the best use of my time. I have never felt more excited and happy as I did when the finished cookies were pulled out of the oven. I turned to my mom and begged to eat one.
“They’re done! Can I please please please have one?” I pleaded, mouth watering and stomach rumbling.
“You need to wait for them to cool, but in the meantime can you pour us some milk to drink with our cookies. It’ll make the cookies taste ten times better,” My mom instructed, giving me an exciting task to fulfill. After that we would spend the rest of the afternoon laughing and talking about anything and everything, spending quality time while munching on the warm, fresh peanut butter cookies. Little did I know it was also a favourite for my mom because peanut butter and milk are both excellent sources of protein and vitamins. Looking back, I realize the Kraft recipe is actually made up of four ingredients, peanut butter, sugar, egg and love. Which is what I feel everytime I take a bite off the soft, sweet, ooey gooey delicious peanut butter cookies.
