My dad has always been the main cook in our family for almost everything. Growing up, this felt normal to the point of my being surprised when I would go to my friends’ houses and their moms were usually the ones cooking.
This is a prime example of his culinary expertise. He has his own original pasta recipe, which my mom titled “The Best Pasta in the World” because on one of their first dates he made this for her and she says it was the final step to her falling in love with him. He makes this dish every Mother’s Day, anniversaries, and on any birthday where they aren't going out somewhere; it's a reminder of their love. But it isn’t just a favorite of my mom -- my dad says he enjoys making it as much as our whole family enjoys eating it due to its sweet and comforting flavours. (Although I do avoid the peppers.) The pasta itself isn’t especially complicated or difficult; it starts with a big pot of rotini cooked al dente and then mixed with varied vegetables ranging from cucumbers to broccoli, tomatoes to peppers, and then sprinkled with feta cheese and slathered with golden italian dressing. After that it's quite simple. He mixes it, ladles it out and serves it to a candlelit table set properly for whatever the occasion may be. After that we all dig in, savoring every delectable bite. Early on there is quite little conversation as we are all preoccupied with stuffing our mouths with as much as we can get our hands on, creating a silence only interrupted by the occasional sounds of glasses being picked up and forks scraping bowls for the last remnants of food, but eventually the silence gives way to hearty conversation which carries us through the night.
